A simple, delicious side dish made with corn, creamed corn, cornbread mix, sour cream, and butter.
Ingredients
1 can (15 ounce) corn, drained
1 can (15 ounce) creamed corn
1 package (8.5 ounce) cornbread mix
1 cup sour cream
1/2 cup butter, melted
Instructions
1. 1. Preheat the oven to 350°F.
2. 2. Grease a 9×13-inch baking dish with nonstick cooking spray or butter.
3. 3. In a large mixing bowl, combine the drained canned corn, creamed corn, cornbread mix, sour cream, and melted butter. Stir until well-combined.
4. 4. Transfer the corn mixture to the prepared baking dish and spread it out evenly. Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
5. 5. Allow to cool for 5-10 minutes before serving.
Notes
For best results, use room temperature ingredients.
Do not overmix the batter.
Keep an eye on the casserole during the last 10 minutes of baking to prevent over-browning.
