Ingredients
1–1/2 pound fresh fish fillets
3 tablespoon lime juice
1 tablespoon lime zest
1 can (13.5 ounce) coconut milk
4 cloves garlic, minced
4 tablespoon unsalted butter
fresh cilantro, for garnish
salt, to taste
black pepper, to taste
chili flakes, optional
Instructions
1. 1. Marinate the Fish: In a shallow dish or resealable bag, combine the fish fillets, lime juice, lime zest, and coconut milk. Cover or seal, and let the fish marinate in the refrigerator for 15-30 minutes.
2. 2. Prepare the Garlic Butter: In a small saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Remove from heat and set aside.
3. 3. Cook the Fish: Preheat your oven to 400°F. Remove the fish from the marinade and pat it dry. Season with salt and pepper. For baking, place on a greased baking sheet and cook for 12-15 minutes. For grilling, cook for 4-6 minutes per side.
4. 4. Finish with Garlic Butter: Drizzle the warm garlic butter over the cooked fish and garnish with cilantro.
