Description
Cranberry Apple Twice Baked Sweet Potatoes are the ultimate comfort food for the autumn season. This delightful dish combines the natural sweetness of sweet potatoes with the tart, festive flavors of cranberries and apples, creating a harmonious balance that will have your taste buds dancing with joy.
Ingredients
2 medium sweet potatoes
1 cup cranberries
1 cup diced apples
1/4 cup brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
2 tablespoon butter
1 teaspoon vanilla extract
1/4 teaspoon salt
Instructions
1. 1. Preheat your oven to 400°F. Wash the sweet potatoes and pierce them several times with a fork. Bake the sweet potatoes for 45-60 minutes, or until a fork can be easily inserted. Allow the potatoes to cool slightly.
2. 2. In a medium bowl, combine the cooked sweet potato flesh, chopped cranberries, diced apples, brown sugar, cinnamon, nutmeg, butter, vanilla extract, and a pinch of salt. Mash and mix the ingredients until well combined.
3. 3. Cut the baked sweet potatoes in half lengthwise and carefully scoop out the flesh, leaving a thin layer of potato attached to the skin. Add the sweet potato flesh to the filling mixture and stir to combine. Spoon the filling back into the potato skins, dividing it evenly among them.
4. 4. Place the stuffed sweet potato halves on a baking sheet and bake for an additional 15-20 minutes, or until the filling is heated through and the tops are lightly browned.
5. 5. Serve the Cranberry Apple Twice Baked Sweet Potatoes warm, garnished with a sprinkle of chopped pecans or a drizzle of maple syrup for an extra touch of sweetness.
Notes
For a smooth and creamy filling, be sure to mash the sweet potato flesh thoroughly. You can also use a hand mixer or potato masher to achieve the desired consistency.
Leftover twice-baked sweet potatoes can be stored in an airtight container in the refrigerator for up to 4 days. To reheat, simply place them in a preheated 350°F oven for 10-15 minutes, or until heated through.
