Ingredients
1 (3-4 pound) boneless skinless turkey breast
1 cup fresh cranberries
1/2 cup freshly squeezed orange juice
1 tablespoon orange zest
1/2 cup brown sugar
2 tablespoon Dijon mustard
2 tablespoon olive oil
3 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. 1. Thaw the turkey breast thoroughly if frozen. Optionally brine the turkey in a saltwater solution for added moisture.
2. 2. Season the turkey breast generously with salt and pepper.
3. 3. In a saucepan, combine cranberries, orange juice, orange zest, brown sugar, Dijon mustard, and olive oil. Simmer until cranberries burst and glaze thickens.
4. 4. Pour the glaze over the turkey in a baking dish, cover, and refrigerate for at least 30 minutes.
5. 5. Preheat oven to 325°F. Roast turkey for 1.5 to 2 hours, basting every 30 minutes until internal temperature reaches 165°F.
