Ingredients
8 ounce elbow macaroni
2 cup corn kernels
1/2 cup mayonnaise
1/2 cup sour cream
2 tablespoon lime juice
1/2 cup Cotija cheese
1/2 cup red onion
1/4 cup cilantro
1 teaspoon paprika
1/2 teaspoon chili powder
Salt and black pepper to taste
Instructions
1. 1. Cook the elbow macaroni according to the package instructions. Drain and chill.
2. 2. Cook the corn kernels over medium heat until tender, about 5-7 minutes. Cool slightly.
3. 3. In a large bowl, combine pasta, corn, mayonnaise, sour cream, and lime juice. Stir well.
