1 box Jiffy corn muffin mix
2 cup canned corn (1 cup whole, 1 cup creamed)
1 cup sour cream
1/2 cup butter, melted
2 large eggs
Instructions
1. 1. Preheat your oven to 350°F and grease a 9×13-inch baking dish.
2. 2. In a large mixing bowl, combine the Jiffy corn muffin mix, canned corn (both whole and creamed), sour cream, melted butter, and beaten eggs. Stir until the ingredients are well incorporated, being careful not to overmix.
3. 3. Pour the mixture into the prepared baking dish. If desired, sprinkle some shredded cheddar cheese or chopped green onions on top.
