Ingredients
1 can (15 ounce) whole kernel corn, drained
1 can (15 ounce) cream-style corn
1 package (8.5 ounce) Jiffy corn muffin mix
1 cup sour cream
1/2 cup melted butter
1 cup shredded cheddar cheese (optional)
Instructions
1. 1. Preheat your oven to 350°F.
2. 2. In a large mixing bowl, combine the drained whole kernel corn, cream-style corn, Jiffy corn muffin mix, sour cream, and melted butter. Stir until all the ingredients are well incorporated.
3. 3. If you’re adding the optional shredded cheddar cheese, gently fold it into the corn mixture.
4. 4. Grease a 9×13-inch baking dish and pour the corn casserole mixture into it, spreading it out evenly.
5. 5. Bake the casserole for 45-55 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
6. 6. Remove the Jiffy Corn Casserole from the oven and let it cool for 5-10 minutes before serving.
