Ingredients
1 whole turkey (12–14 pound)
1 cup unsalted butter, softened
1 tablespoon kosher salt
1 tablespoon freshly ground black pepper
Fresh herbs (such as thyme, rosemary, and sage)
1 onion, quartered
2 carrots, chopped
2 stalks celery, chopped
2 cup chicken broth
Instructions
1. Thaw the turkey in the refrigerator for 3-4 days if frozen.
2. Brine the turkey in a saltwater solution for 12-24 hours or rub with a salt-based seasoning for dry brining.
3. Pat the turkey dry and separate the skin from the meat.
4. Rub softened butter under the skin and season with salt and pepper.
5. Place onion, carrots, celery, and fresh herbs in the turkey cavity.
6. Preheat oven to 450°F and roast for 30 minutes.
7. Reduce temperature to 350°F and continue roasting, basting every 30 minutes.
8. Check internal temperature: 165°F in breast, 175°F in thigh.
9. Let rest for 20-30 minutes before carving.
Notes
Store leftover turkey in an airtight container in the refrigerator for up to 4 days.
Reheat slices in a skillet with broth or gravy or bake at 350°F until heated through.
