1 whole turkey (1214 pound)

1/4 cup olive oil

4 cloves garlic, minced

1/4 cup fresh rosemary, chopped

1/4 cup fresh thyme, chopped

1/4 cup fresh sage, chopped

1 onion, finely chopped

1 lemon, sliced

2 teaspoon salt

1 teaspoon black pepper


Instructions

1. 1. Preheat your oven to 325°F.

2. 2. Rinse the turkey under cold water, pat it dry with paper towels, and season the cavity generously with salt and pepper.

3. 3. In a small bowl, combine the minced garlic, chopped fresh herbs, and a pinch of salt and pepper. Rub this fragrant mixture all over the outside of the turkey and under the skin.

4. 4. If you’d like, stuff the turkey cavity with onion, lemon, and additional herbs.

5. 5. Tie the turkey’s legs together with kitchen string and tuck the wing tips under the body.

6. 6. Place the prepared turkey in a roasting pan and roast it in the preheated oven, basting it every 30 minutes until the internal temperature reaches 165°F in the thickest part of the breast and the innermost part of the thigh.

7. 7. Once cooked, transfer it to a cutting board and let it rest for 20-30 minutes before carving.

Notes

Store leftover turkey in an airtight container in the refrigerator for up to 4 days. For longer-term storage, slice or shred the turkey and place it in freezer-safe bags or containers. Properly frozen, the turkey can last for up to 3 months.
